Gemma's Chilley Farm chicken wrapYou will need

2 x 240g chicken breasts
290g dry cured streaky bacon (6 rashers)
100g Brie
2 teaspoons pesto
2 large carrots
6 green beans
2 large white potatoes
25g butter

Cook Time: 25 Minutes
Serves: 2

Slice open chicken breast to make a pocket. Stuff with brie and pesto.Wrap breast with 3 slices of streaky bacon. Lightly fry until bacon is browned and then place in a pre heated oven, 180c and cook for approximately 20 minutes. Ensure chicken is cooked right through by piercing with a skewer and ensuring the juices run clear.

When you put the chicken wrap in the oven prepare the potatoes for boiling by peeling and chopping into smaller pieces. Boil for 15 minutes so they are soft enough to mash. Drain the water from the pan and add the butter to the potatoes and mash, you may also add a little milk if you like your mash creamier. Boil or steam the carrots and beans to your liking.

Plate, serve and enjoy.
