“We bought some beef brisket from Chilley Farm – not had this cut of meat before and I don’t buy beef very often as I find it a little tough once cooked. I spoke to the butcher at Chilley Farm who told me to cook it long and low in a sealed dish with about an inch of water in the bottom. I cooked it for about 6 hours at a really low temperature and it was absolutely delicious. I used the water the meat cooked in for the most wonderful gravy and we all loved the beef! Would definitely recommend this cut of meat to anyone, wonderfully tender and fabulous gravy!”
